Recipes
Chicken & Stuffing Casserole
Spray a 8X8 baking dish (glass) with cooking spray. Layer ingredients in the dish:
1 can (16oz) chicken or turkey chunks (save broth)
1 can cream of mushroom or cream of chicken soup
(Stir broth from chicken into soup)
1/3 c. Parmesan cheese
1 pkg. Stove Top Stuffing – prepared
Cover tightly with foil. Bake at 350 degrees for about 30 minutes, until hot & bubbly.
Serves 6
Beef Noodle Stroganoff
1 can (16 oz) beef chunks with broth
¼ c. dehydrated onion
¼ tsp. dehydrated minced garlic
6 oz. can of mushrooms with juice
3 Tbsp. lemon juice
1 can undiluted Consommé (Campbell’s)
¼ tsp. pepper
8 oz. pkg. spiral macaroni (rotini)
Stir all ingredients together in a large skillet. Cover and cook until noodles are tender, about 15 minutes stir occasionally. Top with sour cream if desired.
Serves 6
Tex-Mex Soup
1 can (14 ½ oz.) chicken broth (or chicken bouillon and water)
2 c. salsa
1 can corn, undrained
2 cans black beans, rinsed and drained
(other varieties of beans taste great too)
Pour all of the ingredients into a sauce pan. Bring to boil, reduce heat and simmer for 10 minutes.
Serves 4 to 6
Sticky Chicken
1 c. apricot jam (peach or plum jam or cranberry sauce is good too)
1 c. Catalina salad dressing
1 pkg. dry onion soup mix
1 can (16oz) chicken or turkey chunks (save broth)
Combine jam, Catalina dressing, soup mix & broth from chicken in a large non-stick skillet. Bring to boil; reduce heat, simmer partially covered for 10 to 15. Stir in chicken chunks and cook about 5 minutes longer. Serve over steamed rice.
Serves 6 to 8
Potato Chowder
4 c. hot water
2 c. dehydrated potato shreds
3 Tbsp. dehydrated onion
3 c. water
¾ c. flour
1 c dry milk powder
2 Tbsp. butter powder
1 Tbsp. chicken bouillon
¼ tsp. pepper
1 Tbsp. dry parsley
1 can evaporated milk
Combine 4 cups water, potato shreds, & onion. Let stand 15 minutes. Bring to boil; simmer 10 minutes, stirring occasionally. Meanwhile, combine 3 cups water, flour and dry milk in blender. Blend until smooth; stir into potatoes along with butter powder, chicken bouillon, pepper & parsley. Bring back to a boil; stir constantly. Cook 2 minutes; add evaporated milk; heat, but do not boil.
Soup variations:
Potato Corn Chowder– add a can of corn & diced ham or crumbled bacon, or bacon bits.
Barbecued Beans and Corn
2 cans black beans, rinsed and drained (or use 4 c cooked and drained beans)
1 can (14 ½ oz.) ready cut tomatoes
1 can (4 oz.) diced green chilies
1 can corn, drained
¼ c. barbecue sauce
½ tsp ground cumin
Combine all ingredients in a sauce pan. Simmer about 10 minutes. Adjust seasonings with a little salt and pepper if needed. Serve over steamed rice.

Ham & Pineapple Bake
1 ½ c. chopped canned ham
1 can (8oz.) crushed pineapple, drained
2 Tbsp. dehydrated onion (re-hydrate in 2 Tbsp. pineapple juice)
1 c. biscuit mix
1 c. milk (reconstituted powdered milk)
2 Tbsp. egg powder plus 3 Tbsp. water
2 tsp. prepared mustard
1/3 c. Parmesan cheese
Pre-heat oven to 400 degrees. Spray a 9” pie plate with cooking spray. Sprinkle ham, pineapple & onions in pie plate. Mix biscuit mix, milk, egg powder, water and mustard. Whisk until blended. Pour over ham mixture. Sprinkle on parmesan. Bake uncovered for 25 minutes or until knife inserted in center comes out clean.
Shepherd’s Pie
1 can (16 oz.) beef chunks
¼ c. dehydrated onion
½ tsp. salt
¼ tsp. Pepper
1 ½ tsp. Worcestershire sauce
1 can tomato soup
1 can corn, drained
1 can green beans, drained
3 c. mashed potatoes (potato pearls)
1/3 c. milk
Cheese powder
Pre-heat oven to 350 degrees. Spray a 3 quart casserole dish with cooking spray. Stir together beef chunks with broth, onion, seasonings, soup, and vegetables. Pour into prepared dish . Make mashed potatoes. Top beef mixture with mashed potatoes. Bake for 20 minutes. Meanwhile, whisk cheese powder into milk until it has a sauce consistency, let stand 5 minutes to re-hydrate. Drizzle sauce over baked casserole, and bake 5 minutes longer.
Serves 6
Taco Rice
¾ c. beef or taco flavored TVP
¾ c. water
1 (16oz.) jar salsa
1 can (15oz.) black beans, rinsed & drained (or 2 c. cooked beans)
1 can corn
1 tsp. chili powder
3 cups cooked rice (white or brown)
1/3 c. milk
Cheese powder
Combine milk and enough cheese powder to make a sauce – let stand 5 minutes. Combine first 6 ingredients in a large skillet. Bring to a boil; simmer 5 minutes. Stir in cooked rice, cover and simmer until hot. Drizzle cheese sauce over top. Turn off heat, cover skillet and let stand 5 minutes. Serve with sour cream, shredded lettuce, guacamole, chopped green onion and dices tomatoes. (you could use yogurt or reconstituted sour cream powder, sprouts, re-hydrated onion, drained, ready cut canned tomato)
Serves 4 to 6
Chicken A La King
White sauce mix
1 tsp. chicken bouillon
1 ½ tsp. soy sauce
1 can chicken chunks (save broth)
1 can sliced mushrooms
1 can mixed vegetables
8 oz. uncooked noodles
Cook noodles, drain and rinse with hot water, keep warm. Make 2 cups medium thickness white sauce using broth from canned chicken as part of the liquid. Season white sauce with bouillon, soy sauce and a little pepper. When sauce is thick and bubbly, stir in chicken chunks, drained mushrooms and drained vegetables. Simmer until thoroughly heated. Serve over noodles.
Serves 4
Salmon Burgers
Alfalfa sprouts and buns need to be made in advance. You will need 4 buns plus:
1 ½ c. soft bread cubes (1/2”)
¾ tsp. grated lemon peed (optional)
2 Tbsp. lemon juice
1 Tbsp. egg powder & 1 ½ Tbsp. water
1 can (14 oz.) salmon, well drained, flaked, skin and large bones discarded
1/3 c. mayonnaise
1 tsp. dill weed
Alfalfa sprouts
Place bread cubes in a medium bowl. Add lemon peel, lemon juice, & egg; mix well. Add flaked salmon; mix well. Heat a non-stick skillet; spray with cooking spray. Divide salmon mixture into 4 large patties and ½” thick. Cook until golden brown on both sides (about 5 min. per side). Stir dill weed into mayonnaise. To serve, spread mayonnaise mixture on buns, top with salmon burgers & sprouts.
Serves 4
Black Bean & Rice Burgers
1 c. cooked brown or white rice
1 can (15 oz.) black beans, rinsed & drained
2 Tbsp. dehydrated onion (cover with water to re-hydrate, drain)
2 Tbsp. salsa
Mash beans, stir beans, rice, onion and salsa together. Heat a non-stick skillet over med. high heat; spray with cooking spray. Spoon mixture by ½ cupfuls into skillet; flatten to ½ inch. Cook 4-5 minutes on each side, or until light brown. Serve with warm flour tortillas or on buns.
Dumpling Topped Chicken Stew
1 can chicken or turkey chunks
1 can cream of chicken soup
1 can evaporated milk
1 can mixed vegetables, drained
½ tsp. beef bouillon (enhances chicken flavor)
1 tsp. poultry seasoning
2 tsp. dry onion
2 c. biscuit mix & 1 tsp. parsley flakes
¾ c. milk
Stir soup, milk, onion & poultry seasoning together in a 4 or 5 qt Dutch oven, stir in chicken and vegetables. Bring to boil, stir frequently. Meanwhile, stir milk into biscuit mix Drop large spoonfuls of biscuit dough evenly over top of simmering stew. Sprinkle with paprika. Cover tightly. Reduce heat; simmer 10 min. Remove lid and simmer 10 min. longer. (It is the steam that makes wonderful light dumplings, so do not lift lid for that first 10 minutes)
Quick Chili
1 c. beef TVP (or use canned beef chunks)
1/3 c. dehydrated onion
2 cans pinto, kidney or black beans
2 cans (14 ½ oz.) diced tomatoes
1 can tomato sauce plus 1 can water
Salt and pepper to taste
1-2 Tbsp. chili powder, or to taste
½ tsp. dehydrated minced garlic
1/2 -1 tsp. cumin
½ tsp. sugar
1 bay leaf
2 Tbsp. creamy peanut butter
Combine all ingredients except peanut butter in a large saucepan. Bring to a boil; reduce heat and simmer for 20 minutes. Stir in a little soup into the peanut butter and then stir back into pot. Simmer 5 more minutes. (Peanut butter is the secret ingredient that makes this taste like it has cooked for hours.)
Flour Tortillas
2 c. flour
1 tsp. salt
½ tsp. baking powder
¼ c. shortening
Combine flour, salt and baking powder. Cut shortening into flour until it resembles corn meal. Add about ½ to 1 c. warm water to make soft dough. Knead until dough is soft & springy. Divide into 8-10 equal balls and spray lightly with cooking spray. Cover with a cloth and allow to rest for 15-30 min. Heat un-greased griddle. Roll each ball of dough into an 8” circle on a lightly floured surface. Bake on griddle until flecked with brown. Turn and brown other side. If tortilla puffs during cooking use a clean towel to press down. Cover cooked tortillas and keep warm till ready to serve.
Sweet Potato Biscuits
3 c. biscuit mix
2 Tbsp. brown sugar
¾ c. milk
½ c. mashed canned yams or sweet potatoes
2 Tbsp. brown sugar
Pre-heat oven to 400 degrees. Spray cookie sheet with cooking spray. Stir brown sugar into biscuit mix. Stir milk and mashed yams together and then add to biscuit mix. Stir just until moistened. (if dough is too dry, add additional milk, 1 tsp. at a time until all dry ingredients are moistened.) Scoop batter with a ¼ cup measure onto prepared cookie sheet. Sprinkle tops of biscuits with remaining 2 Tbsp. of brown sugar. Bake 15-20 minutes or until peaks and bottoms of biscuits are golden.
Makes 12 biscuits
Cranberry-Apple Sweet Potatoes
1 can (21oz.) apple pie filling
2 cans (18 oz) yams, (or sweet potatoes) drained and cut into bite size pieces
1 can whole cranberry sauce
2 Tbsp. apricot jam
2 Tbsp. orange marmalade
Spray an 8X8 inch baking dish with cooking spray. Spread pie filling in prepared dish; arrange yam pieces on top. In a small bowl stir together the remaining ingredients; spoon over yams or sweet potatoes. Bake, uncovered, in a 350 degree oven for 20-25 minutes or until heated through.
Serves 6-8
Quick and Easy Fruit Salad
1 can (15 ¼ oz) pineapple tidbits in own juice-do not drain
1 small pkg. instant lemon pudding mix (vanilla or banana cream are good too)
2 cans fruit cocktail, drained
1 or 2 cans mandarin oranges, drained
1 packet Dream Whip (optional)
Stir pudding into pineapple and juice in a large bowl. Fold in the remaining well drained fruits. Make Dream Whip according to pkg. directions; fold into salad. Serve immediately. (Fresh fruits such as bananas, grapes, kiwi, apples, strawberries etc. can be added if available)
Serves 8
Impossible Pumpkin Pie
2 Tbsp. egg powder plus 3 Tbsp. water
½ tsp. salt
½ tsp. ginger
1 tsp. cinnamon
¼ tsp. cloves
¼ tsp. nutmeg
1 ½ c. canned pumpkin
¾ c. sugar
½ c. biscuit mix
1 can evaporated milk plus enough water to make 2 cups
Pre-heat over to 375 degrees. Combine all ingredients in a blender; blend on low speed, scrape down sides of blender and then blend mixture for 2 minutes. Pour into a large (10 inch) greased and floured pie plate. Bake for 35-40 minutes.
Quick Fruit Cobbler
1 c. flour (nice with ½ white & ½ whole wheat flour)
1 ½ tsp. baking powder
¼ tsp. salt
¾ c. sugar
¾ c. milk
2 cans (16 oz. each) or 1 quart fruit
¼ c. sugar and ½ tsp. cinnamon (stir together and reserve for topping)
Pre-heat oven to 350 degrees. Spray a 2 qt. baking dish with cooking spray. Put 2 Tbsp. butter or margarine in dish and place in oven to melt butter. (You could use oil and add some butter powder to dry ingredients) Stir dry ingredients together; add milk and whisk until batter is smooth. Pour batter evenly over melted butter. Spoon fruit evenly over batter; pour fruit juice over all. Sprinkle cinnamon-sugar mixture on top. Bake 45-50 minutes. Test for doneness like a cake.
Serves 8
Rice Pudding in an Instant
1 small instant vanilla pudding mix
2 c. milk (or use 1 c. milk and 1 c. yogurt)
3 c. cooked rice (brown or white)
½ c. plumped raisins (pour boiling water on them, leave a few min. and then drain)
¼ tsp. pumpkin pie spice
½ tsp. vanilla
Prepare pudding mix. Stir in remaining ingredients. Spoon into dishes, chill for 5 minutes before serving. This is nice for breakfast, dessert, or snack.
Wheat & White Snicker Doodles
1 c. shortening (you can substitute butter powder for some or all of the shortening)
1 ½ c. sugar
2 tbsp. egg powder mixed with 3 Tbsp. water
1 ½ c. all purpose flour
1¼ c. whole wheat flour
2 tsp. cream of tartar
½ tsp. salt
1 tsp. baking soda
2 Tbsp. sugar
1 tsp. cinnamon
Cream shortening and sugar together. Add eggs and beat well. Combine flour, cream of tartar, salt and baking soda. Add to creamed mixture and mix well. Roll into approx. 1 inch balls. Combine 2 Tbsp. sugar & cinnamon. Roll balls in cinnamon/sugar mixture. Place on ungreased cookie sheet about 3 inches apart. Slightly flatten. Bake at 400 degrees for 8-10 minutes.
Makes 4 dozen.
Cherry Chocolate Bars
Stir together 1 pkg. chocolate cake mix, 1 can (21 oz.) cherry pie filling, 2 Tbsp. egg powder, 3 Tbsp. water and 1 tsp. almond extract. Spread in a greased and floured 9X13 pan. Bake at 350 for 30-35 min. Cool before cutting.
